 BURRO E SALVIA
(Sage and butter sauce)

Butter, 50g (2oz)
Large fresh sage leaves, shredded, 8-10.
Milk, 100ml (3 1/2 fl oz).
Salt

Melt the butter in a small saucepan, add the sage and fry very gently for 1-2 minutes,
being very careful that the sage doesn't become dry or brittle.
Add the milk, season with salt and bring to the boil.
Serve immediately.
