BASIC PIZZA DOUGH
(625g. 1,1/4 lb. 4 pizza's)

Fresh yeast, 15g (1/2oz).
Or dried yeast, 7g (1/4 oz)..
Warm water, 250ml (8 fl oz).
Olive oil, 2 tbls, or 25g (1oz) soft margarine.
Salt, 1 tsp.
Plain flour, about 425g (14oz).

If using dried yeast, leave it to dissolve in the warm water for about 10 minutes.
Put the yeast water or warm water and fresh yeast in a large bowl with the oil or margarine and
salt and mix together.
Gradually add the flour, stirring it in with a fork or wooden spoon until the mix forms a soft but not
sticky dough.
Knead well for about 5 minutes.

SCHIACCIATA CON UVETTA E NOCI
(Sweet walnut bread)

Light brown soft sugar, 40g (1,1/2oz).
Basic pizza dough, 1/2 quantity.
Sultanas, 40g (1,1/2oz).
Chopped walnuts, 40g (1,1/2oz).
Flour for rolling.
Light brown soft sugar for sprinkling, 1 tsp.

Knead the sugar into the dough, then put it on a lightly floured surface and roll it out to a rectangle
about 20x25 cm (8x10 in). Spread the sultanas and walnuts over one half of the rectangle, then
fold over the other half and roll it out again, repeat the folding and rolling twice more.
Place the loaf on a floured board, cover with a clean cloth and leave to rise in a warm place for
about 20 minutes.
Preheat the oven to gas mark 7 / 220c / 425f.
Transfer the loaf to a floured baking sheet, brush it with water and sprinkle with the sugar.
Bake for 20 to 25 minutes or untill golden and crispy.
